Chicken Parmesan

When I got home from the hospital there were 3 families from the ward that brought us dinner and one of them was this meal.  It was my absolute favorite and this past week my friend came over and taught me how to make it myself, since it was such a hit that night with everyone, I decided it was definitely worth sharing.



Ingredients:

1 packet of Original Ranch Dressing Mix
4 Boneless skinless chicken breasts
3 eggs
2 packs of wheat Ritz Crackers
Salt
Pepper
Onion Powder
Garlic Powder
1 cup of shredded Parmesan cheese

Directions:

To make the breading:
Put the crackers in a 1 gallon ziplock bag and roll with a rolling pin to crumble them into a fine texture.
Pour the crumbs into a medium/small mixing bowl and mix in the ranch dressing packet, salt, pepper, and sprinkles of the garlic and onion powder.

The chicken:  Preheat the oven to 350. Beat the eggs in a small mixing bowl until well mixed.  Lay the chicken flat on your cutting board and slice it in half horizontally, hamburger bun style (you don't have to do this, it just helps the chicken go farther) dip the chicken in the egg, then the cracker mix to bread it, lay it flat on the pan and repeat with the rest of your chicken.  Sprinkle the cheese over each piece of chicken then let bake for  30 minutes or until it's no longer pink on the inside.

Serve with your choice of pasta and sauce.
