Ingredients:
1 1/2 cups sugar
1/2 butter or margarine, softened (I always use real butter)
1/2 cup shortening
2 large eggs
2 3/4 cups all purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
3/4 teaspoon salt
Cinnamon Sugar for rolling the dough
1/4 cup sugar
2 teaspoons ground cinnamon
*Note - it looks like a lot of cinnamon but it tastes perfect on the cookie
Directions:
1) Preheat oven to 400 degrees
2) In large bowl combine sugar, butter, shortening, and eggs with electric mixer. (If your butter isn't soft enough it won't combine well at this point, if it doesn't crumble and mix you may have to stir with your hands to warm it up more)
3) Stir in flour, cream of tartar, baking soda and salt. When finished it should look like smooth sugar cookie dough.
4) Shape the dough into balls and roll in cinnamon sugar. Place about 2 inches apart on a cookie sheet, bake 8-10 minutes
*I've found 8 minutes is perfect for mine, but I know every oven cooks a little different. They should still be soft when pulled off the sheet. They'll keep their form after cooling if baked all the way through.
Cool and serve!
