This is a recipe my mom came up with several years ago, she had gone on a date where he had made her dinner and she said the chicken smelled fantastic but the cinnamon flavor hadn't been able to penetrate the skin of the chicken, so she improvised, and this amazing dish was born. Gotta love good food.
2 lbs cubed chicken breast
1 stick of butter
1/2-1 tsp of cinnamon (this is approximate based on the fact that I never measure, I just eye it and a little bit goes a long way)
Put butter in frying pan with 2 lbs of cubed chicken breast and sprinkle cinnamon over it, a little goes a long way so I would add a little, then more if needed later. Stir the chicken all the way to the bottom making sure it doesn't burn, when finished it should look well seasoned and cooked all the way through.
My family always eats this with white rice and green beans with the Jiffy apple cinnamon muffins on the side. It's a delicious meal and filling, which is always a plus.
